Cette gomme de xanthane sans gluten s'utilise comme épaississant, stabilisant ou émulsifiant. Il convient d'utiliser 2g pour 200 à 600ml de préparation. Utiliser la gomme de xanthane en association avec la gomme de guar pour des pains sans gluten bien aérés.
Make your own edible glue, pastillage gum paste with the PME xanthan gum. This white powder has no flavour and is also the basic ingredient in ice-cream, milkshakes and more.
Recipe to make edible glue: mix 1/4 teaspoon gum powder with 4 tablespoons water. It will take a approx. 10 - 20 minutes to dissolve. It will be a clear, no colour glue.
Recipe to make quick gum paste: take 5 gram gum powder and 250 gram fondant. Knead into the fondant and ideally allow to rest for 20 - 30 minutes before use.
Recipe to make quick pastillage: Blend and stir 1 teaspoon gum powder into 100 gram Royal Icing. Allow to rest for approx. 1 hour before use.
Ingredients: thickening agent (xantan gum – E415).
Storage: store in a cool and dry place.
